Holiday Morning Crockpot Breakfast Casserole

Try this crockpot breakfast casserole for the holidays!

Ingredients

  • 6 Eggs
  • 3/4 cup Egg whites
  • 1/2 cup Almond milk
  • 1/2 tsp Garlic powder
  • 1 tsp Salt & pepper
  • 840 g Cauliflower (1 large head)
  • 1/2 cup Yellow onion (Chopped)
  • 3 slices Turkey bacon (Pre-cooked and chopped)
  • 119 g Red bell pepper (1 medium pepper, chopped)
  • 119 g Green bell pepper (1 medium pepper, chopped)
  • 3/4 cup Low-fat shredded cheddar cheese

Instructions

  • Spray slow cooker with cooking spray
  • Evenly place 1/3 of the shredded cauliflower in the bottom of the slow cooker, & top with 1/3 of the onion
  • Season with salt & pepper, top with 1 slice of chopped turkey bacon and a third of the cheese
  • Repeat the layers two more times
  • Pour the egg mixture over the layers in the slow cooker
  • Cook on low for 5-7 hours, or until eggs are set and the top is browned
