Nutty Quinoa

Ingredients

  • 1 3/4 cups Water
  • 1 cup Quinoa
  • 1/4 cup Almonds (Sliced and toasted)
  • 2 tbsp Fresh lime juice
  • 2 tsp Olive oil
  • 1 1/2 tsp Sesame oil
  • Pinch Kosher salt
  • 45 g Green onions (3 medium green onions sliced thin)
  • 12 oz Soft tofu

Instructions

  • Bring water and quinoa to a boil
  • Bring water and quinoa to a boil. Reduce heat and let simmer for 10-15 minutes or until cooked
  • Drain quinoa
  • Stir in almonds, juice, sesame oil, salt, and onions
  • Sautee tofu in olive oil. Top over quinoa mix
