Pulled Chicken (Crockpot Dish)

Ingredients

  • 28 g Onions (2 medium, sliced)
  • 12 oz Roasted red peppers (1 jar)
  • 10 oz Hot rotel (1 can)
  • 1 1/4 lbs Organic chicken breasts (Trim the fat)
  • 2 1/2 tbsp Low-sodium taco seasoning (Spread over chicken)
  • 8 oz Fresh salsa (1/2 jar)

Instructions

  • Place ingredients into crockpot, in that order (ie: sliced onions first, then jar of roasted peppers and so on)
  • Cook on high for 6-8 hours
  • Shred chicken with a fork
  • Optional: add 1/2 can black beans, top with avocado (not included in nutrition facts)
  • Enjoy!
