Sweet Potato Hash Egg Muffin

Meal prep these egg muffins on Sunday and enjoy for breakfast for the week!

Ingredients

  • 130 grams sweet potato 1 small sweet potato
  • 100 grams eggs 2 large eggs
  • 1/2 tsp. olive oil
  • 1/4 cup egg whites
  • 2 slices turkey bacon chopped
  • 60 grams red bell pepper chopped (1/2 medium pepper)
  • 30 grams yellow onion chopped (1/4 medium onion)
  • seasonings (to taste) salt, pepper, garlic

Instructions

  • Preheat oven to 350F
  • Use a grater to shred sweet potato
  • Combine shredded sweet potato, olive oil, & seasonings
  • Spoon into sprayed muffin tin filling 6 muffin tins & bake for 30 mins
  • Combine eggs, turkey bacon, peppers, onion, & season
  • Pour egg mixture into baked sweet potato and continue to bake for 15-20 mins until eggs are cooked
