Blueberry Protein Muffins

This recipe makes 12 muffins.

Ingredients

  • 1 cup old fashioned oats
  • 1 cup instant oats
  • 3 tablespoons butter
  • 2 tablespoons agave
  • 3 ounces blueberries
  • 1/2 tsp salt
  • 1 cup egg whites
  • 1 large egg
  • Dash cinnamon
  • 2/3 cup almond milk
  • 2 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees
  • Whisk egg
  • Melt butter
  • Combine oats, butter, eggs, egg whites, cinammon, almond milk, vanilla extract, salt, agave and mix well
  • After all ingredients are mixed, fold in blueberries
  • Portion in the muffin tin Recommended: use these silicone baking cups to prevent sticking
