Instructions
  1. Wash and chop kale (remove leaves from woody stems).
  2. Wash and chop tomatoes.
  3. In a large bowl combine kale, lemon juice, olive oil, salt and pepper (if desired).
  4. Toss to coat kale leaves completely.
  5. Top with cooked chicken breast and chopped tomatoes.
  6. Optional: serve with sliced lemon garnish.
