Instructions
  1. Soak cashews in water overnight (8-10 hours).
  2. In a large pot combine chopped apples, raisins, cinnamon, vanilla extract, and salt.
  3. Pour in water and cook on medium, stirring occasionally for 20-25 minutes, until apples and raisins are soft.
  4. Remove from heat and allow to cool for 5-10 minutes.
  5. Blend apple raisin mixture until desired consistency in a food processor or with an immersion blender.
  6. Add soaked cashews to the mixture and pulse a few times but keep mixture chunky (similar to consistency of oatmeal).
  7. Serve warm with your favorite toppings (not included in nutrition facts).
