General Tso's Ground Chicken Bowls

A lighter take on takeout. Sweet, savory, and packed with bold flavor in every bite!

Ingredients

The Sauce:

  • 1/3 cup Coconut aminos
  • 3 tbsp Apple cider vinegar
  • 1/4 cup Chicken broth
  • 2 tbsp Hoisin sauce
  • 9 g Garlic (3 minced garlic cloves)
  • 2 tsp Ginger (Minced)
  • 1 tbsp Starch
  • 1/4 tsp Salt and pepper

The Mix:

  • 1 tbsp Avocado oil
  • 5 cups Broccoli florets
  • 2 lb Ground chicken
  • 8 oz Mushrooms (1 container)
  • 2 tbsp Green onion (Sliced)
  • 1/2 cup Water chestnuts (Sliced)
  • 1/4 tsp Salt and pepper

Pair Over:

  • 3 cups Cauliflower Rice (Cooked)

Instructions

  • Combine the ingredients for the general Tso’s sauce in a bowl and whisk well and set aside
  • Using a large pan, heat the avocado oil over medium heat. Add the mushrooms and cook for 2 minutes, then add broccoli and saute for 4-5 minutes. Season to taste and set aside
  • Add the ground chicken to the pan and crumble until fully cooked. Lightly season with salt and pepper
  • Strain fat from ground chicken once fully cooked
  • Add the broccoli, water chestnuts, and mushrooms back to the pan
  • Pour the sauce over the chicken and broccoli and reduce the heat to low
  •  Stir until the sauce thickens and fully coats the chicken and broccoli
  • Serve in bowls with a side of rice or cauliflower rice and top with green onion
