General Tso's Ground Chicken Bowls

Ingredients

The Sauce

  • 1/3 cup Coconut Aminos
  • 3 tbsp Apple Cider Vinegar
  • 1/4 cup Chicken Broth
  • 2 tbsp Hoisin Sauce
  • 3 Garlic Cloves Minced
  • 2 tsp Ginger Minced
  • 1 tbsp Starch
  • Salt & Pepper to taste

The Mix

  • 1 tbsp Avocado Oil
  • 5 cups Broccoli Florets
  • 2 lb Ground Chicken
  • 1 container Mushrooms (8 oz)
  • 2 tbsp Green Onion (sliced)
  • 1/2 cup Water Chestnuts (sliced)
  • Salt & Pepper to taste

Pair Over

  • 3 cups Cauliflower Rice (cooked) (or steamed rice)

Instructions

  • Combine the ingredients for the general Tso’s sauce in a bowl and whisk well and set aside.
  • Using a large pan, heat the avocado oil over medium heat. Add the mushrooms and cook for 2 minutes, then add broccoli and saute for 4-5 minutes. Season to taste and set aside.
  • Add the ground chicken to the pan and crumble until fully cooked. Lightly season with salt and pepper.
  • Strain fat from ground chicken once fully cooked.
  • Add the broccoli, water chestnuts, and mushrooms back to the pan.
  • Pour the sauce over the chicken and broccoli and reduce the heat to low.
  •  Stir until the sauce thickens and fully coats the chicken and broccoli.
  • Serve in bowls with a side of rice or cauliflower rice and top with green onion.
